Course Details

This Apprenticeship standard is designed for trainee Commis chefs who are looking to improve their knowledge and culinary skills and get a nationally recognised Worldchefs certification. The Commis chef will learn and understand how to carry out the basic functions in every section of the kitchen. Therefore having the opportunity to experience ,consider and value each section with a view to choosing where they feel most inspired. Upon completion of the course the trainee will be able to create basic dishes using fresh and local ingredients, demonstrate competency around food hygiene while maintaining a safe kitchen environment. Please note that we adhere to occupational standards within our realistic working environment.

Entry Requirements

Apprentices must be in employment for a minimum of 33 hours a week, in a relevant industry to cover the requirements of the Apprentice Standard Students will be interviewed prior to commencement of the course and undertake English and Math test

Progression onto the Level 3 Apprenticeship standard, Chef de Partie,Senior production Chef role. Promotion within the work place. Higher Level Apprenticeships in the Service Industry.

What will I study?

The learning journey of the Commis chef will enable the understanding and the basics required to progress to any future senior Chef role A broad range of preparation and cooking techniques in the following: stocks, soups, sauces, fish, meat poultry, vegetables, pastry. Food Hygiene Health & Safety Team work Knife safety English and Math Functional skills Level 1 Game Offal, pasta, eggs, dough products, vegetable protein, hot &cold desserts, cakes & sponges, rice dishes.

How will I be taught?

The course is delivered in the new college kitchens and the workplace and comprises of : Level 2 Commis Chef , Functional Skills Maths Level 1- (exempt if Grade 9-4 in Maths GCSE) and Functional Skills English Level 1-(exempt if Grade 9-4 in English Language GCSE) The course requires attendance to the college one day per week to achieve all elements of the Standard.

How will I be assessed?

Continual development of the skills ,knowledge and behaviors are required to meet the Standard and the City and Guilds qualification. A range of on going observations and knowledge tests will be undertaken. Competence is assessed by a two hour culinary challenge, a three hour culinary observation then supplemented by oral questioning resulting in an end point assessment. There will also be a ninety minute online multiple choice test. Functional Skills Math and English are assessed through on-line tests.
